Why were the reapers so interested in humans over any other species

Also if you think ahout it, humans kill other humans in the real. We literally pride ourselves in maming and killing each other. I just can't get the image out of my head of the other Mass Effect aliens monitoring humanity in secrecy from the 14th to 21st century and just laughing at them and viewing us as savages.

due to the facts above they make a good harvesting species contrary to the others you stated, voles are slow no use in harvesting them, hanar are jellyfish, elcor may be useful but there aren't so many, the other species have more military strength making them harder to kill.
thats my opinion at least

They never state that! However in the real world. Humans were originally meant to live until 40. It's only because of modern medicine that we able to live those extra 40 to possibly 50 years. The technology that the humans discovered on Mars. was really military technology. I never remember them entailing medical tech. Medi-gel is a cell regenerator, but in the games They only state biological disasters such as the genophage, or disease that are exclusive to an certain race.

There were hints that they were interested in Shepard and humanity because it was Shepard that stopped Sovereign but that would require the Collectors, and thus by extension, Harbinger to be completely retarded - it's a logical fallacy known as "hypothesis suggested by the data"

(Which is biologically false - as a species, we are much less diverse than other animals on earth. Apparently, mankind went through a "genetic bottleneck" at some point in their history, with only a few survivors repopulating the species. But well.)

This. I think those lines were cut in the final game, but they're in the audio files and on YouTUbe.
In a nutshell, humans have very diverse genetics compared to the other species: they are the ideal candidate to turn into the next Reaper.
