Commander Shepard. When he made specter status, it really put a burr under their saddles. Made Sarin look like an idiot stooge..

One would assume its because of the human ability to adapt or perhaps its just because Shepard pissed off the Reapers enough that they wanted to wipe out humanity first.

In the first ME, the Reaper's only focus on humans were in the form of Husks, seeing as the geth obtained those from the various human colonies they attacked.
In ME2, the Reaper's focus on humans was brought about by Shepard's interference, and seeing Shepard's and other human's adaptability and various genetic difference's, it would make sense for the Reapers to target humanity in the creation of a new Reaper, one that would be more versatile. On top of that, humans had the farthest stretched, least populated and defended colonies of all the other races, being the most recent addition to the galactic community, and making them easier targets than, say, the turians.
In ME3, the Reapers' obsession with humanity makes complete sense when considering ME2. Humanity, being a recent addition to the galaxy, has the least populous colonies, and therefore the most crowded homeworld, and it would take many more Reapers and much more time to process and hunt down all 11 billion humans on Earth. Also, it is open to conjecture that the Reapers may have already begun the process of turning humans into a new Sovereign class Reaper. And where would it make sense for them to do this, what with the loss of the Collector base? The Citadel of course! And the Reapers, thinking like the machines they are, probably would have thought it wise to bring the factory (i.e. the Citadel) to the resource (Earth). We do that today, too, having oil refineries close to the oil itself, to save the costs of transporting it.
Anyways, those are my thoughts on the Reapers obsession with humans.

They weren't, which is why they also attacked Palavin, Tuchanka, etc.

It was not an attack on Earth alone.

Then what were the events in Mass effect 2 for?
They went to so much trouble to specifically make a human reaper yet it was never clearly established why.

the collectors go after lots of species, ME2 happened to be the story about why they went after humanity. Does bioware really need to spell out every little thing that happens in the ME universe?

Too bad that you can't give a legitimate answer to that inside the universe.

It's all about the new writing team which decided it would be a good idea to change the Reapers' intention in the last game and make ME2's plot completely worthless.

To those unfamiliar with what I mean:
The Reapers' original intention from old lead-writer Drew was to stop the spread of Dark Energy. They had to harvest every life (and save them in Reaper form) to ensure the galaxys' survival.
ME2's plot was to show the Reapers in a hurry and desperate need to build a Human Reaper to finally stop the spread of Dark Energy. Only the large genetic variety of the Humans allowed this to happen.
For whatever reason Drew left (call me conspiracy psycho: It wasn't his own will to leave) and the new writing team decided to go for the Synthetics-vs-Organics crap we got. That's why it will always remain a mystery why there was exactly a Human Reaper or why there is a general interest in Humans. ME2's plot was basically made senseles.
