Ok, so, I'm going to stat my very first character with biotics (I usually go for straight up Soldiers), and I was just wondering which biotic 'class' was best for someone who's never used on before?

Adept or Vanguard. The Adept has the most biotic powers, but since you mostly play Soldier, I recommend the Vanguard since it will have some basic biotics while still having some Soldier-like offensive abilities.
Unless you want to go straight-up biotics, then choose the Adept. The Vanguard with Singularity may be a better Adept than the Adept itself, but since you have not played the Adept before, you will likely not have Singularity as a bonus power available (unless you modded your game).

Adept - As we all know, biotics rule in ME1. That's why Liara is always stapled to your hip. Adepts are very powerful, and a lot of fun (if that's your thing). You'll also be squishy, however. Don't forget that you're a support character. Does the idea of staying behind, in cover, softening up enemies for combat characters like Ashley and Wrex to blast appeal?
Vanguard - If you still want to be in the thick of the action, Vanguard is the way to go. Arguably more capable with up-close combat than even the soldier. Often called a 'high-risk, high-reward' class, your offensive power is simply huge, but again, you'll be rather squishy, so you'll still have to think tactically and judge when and when not to charge all guns blazing.
Sentinel - A very well-rounded and robust class. Might not be able to match the soldier for pure DPS, but is actually rather similar to one in playstyle. Your defence will be very good, you'll have access to the best weapon - the pistol, and you won't have to take a techie along with you for those doors and crates. If you want to play like a soldier just with biotics, try this.
