I refused to pick my characters responses based on one tone icon, so although this made me sound like I had a particularly bad multiple personality disorder at times, I felt my characters had some level of complexity to them. I'll do my best to describe them in terms of the tones though. Oh, and I played Legacy and MOTA using post campaign end of Act 3 saves.
Hawke One: Male, Warrior, Mostly direct and diplomatic dialogue choices. Didn't romance anyone.

Bethany (Grey Warden-ified)
Varric
Same 3 companions throughout the game and Legacy (I didn't play MOTA on him) except where I was forced otherwise (I really hate this, and think it would be better if the companion who for story reasons needs to be present was an extra, allowing you to take your preferred companions with you.)
Hawke Two: Male, Mage, Mostly sarcastic and direct dialogue choices. Romanced Merril.

Again, same three companions throughout the game except where forced otherwise. In MOTA I took Anders and Varric. And went with Tallis, I didn't find her particularly interesting but equally didn't have the problem with her that some people seem to.
Anders, Varric, Bethany and Merril were about the only companions I felt any kind of attachment to, unlike DAO where I would mix the companions up more between playthroughs. I didn't pick them for any strategical reasons, but it was handy having my favourite companions being featured in Arelex's no pause nightmare guides:D.
Fenris and Carver I actively disliked, Aveline I was neutral towards. Sebastien I was neutral towards until the end of the game, at which point I wanted nothing more than to introduce him to Mr. Murder Knife (Jr.) Not that Sebastien was badly written in any way, quite the opposite.
Whichever companions I did decide to go with for a playthrough, DAO or DA2, I would normally stick with those 3 throughout the entire game. It's just something I do.
