Woah, difficult...but in no particular order:
Diablo1, because it really creeped me out as a kid, the atmosphere, the music, the gameplay, I loved it. None of the sequels ever came close to this horror-feeling and sense of danger I felt when exploring the ruins...
Baldurs Gate (series) Can't hink about a game I spend more time with. So entertaining, so satisfying, just legendary
Morrowind: the first open-world-RPG I played, and I got lost in it, literally! *laughs* But what a wonderful world, so strange and different from the usual fantasy-stuff, the culture of the dark-elves, and the many stories I had going in my mind as I played...this game will always have a part in my heart#
Warcraft2: one of the earliest games I played, and I liked it, got me interested in Fantasy as a kid, read Lotr after this the first time. Sadly Blizzard destroyed the world with more and more crap loaded into it...
Half-Life1: Not into shooters much, but this game was really enjoyable, suckd me into it like no shooter before
Thief3: Never played the other parts, but this game is great. The orphanage alone is making the game worth being played at least once, never felt so much horror in a game before (well, but then Diablo1...hmmm)
Dragon Age origins: Because it returned the love for such RPGs to me after some disapointments. The game is great. I love the world of Thedas, my wardens, the characters, the ENDINGS!!!! And when Lelianna sings her song all of a sudden...that is how you make a great game, these details are it, Bioware!
Many more, but those are the ones I think of first...apparently ME hasn't earned its palce among them, though ME1 is close...the other ones? Not so much...

There's no number one for me, but, Dragon Age II, Mass Effect 3, Killing Floor, Left 4 Dead, Call of Duty, FIFA, and MindJack are the greatest games ever..

Gothic 1 is my number one.
My first adult game. I love it for the atmosphere and brilliant Polish voiceacting. It was a perfect introduction the the RPG genre - wasn't easy, wasn't hard either. The dialogues were killer - dramatic when needed to, humoristic when they could.
But above all, the atmosphere.
It is one of these games I'll play till I'm old, while screening The Lion King on my 200'' omni TV in 50 years.

Amnesia: The Dark Descent is also my favorite horror game. If you like horror, this game will scare the s*** out of you. You can't kill any of the monsters, you can only run and hide from them. That's REAL horror. Call of Cthulhu was also a damn good horror game as well.

It's too hard to pick one. I think the greatest ever games (judging by how many replays I did) were Knights of the Old Republic, Dragon Age, and Mass Effect...the series for the lot. Now, Knights 2 was missing tons of potential, but I loved the mechanics.

ME1, DA:O, FF VI, Chrono Trigger, KOTOR all in the running. I know there's some I'm missing, but those were the first ones that came to mind. I've also logged by far the most playthroughs on those games.

I would highly recommend Crono Cross. It received a fair deal of backlash when it was released because of the gameplay changes and because the story was too remote from the plot of Chrono Trigger; however, it is a very entertaining game with a great story, solid gameplay, and the largest cast of characters that you are going to find outside of the Suikoden series (most of which receive a fair bit of development).

I'll tell you right now man Chrono Cross is f***ing brilliant. It's ragged on cause it's not a "direct sequel" to Trigger (even though it really is when you learn the whole story). I can't recomend it enough. It's honestly just as good, if not better than, Trigger
