I am no modder and all modders are of course free to ignore my suggestions, but I like to give my suggestions regardless, and its up to others to decide if they want to do something with it or not.
Models for armor, weapons, hair and such are quite limited in appearance options. Most armors are just reskins of the same thing, same goes for the weapons. Hairstyles are mostly several variants of the same thing.
So heres some things I like to suggest:
Templar armor. Yes, the original medieval one of the knight's templar. Chainmail suit with a long white surcoat over it that has a red cross on it. Leather belt to keep it together, and chain gloves and boots to make the set complete, and a greathelm to finish it. Optionally it could replace the current templar armor, making all templars wear this armor. Shields could also be done in this style.
Variants of this medium armor could also be made with different surcoats. These could display the colors and symbol of an existing Ferelden faction such as Cousland or Redcliff.
Versions with partial plate or full plate could also be made, still maintaining the surcoat. for heavy and massive armor.
Another armor I would love to see would be the familiar Gothic Armor, or at least the characteristic visor helmet that comes with it. Would make a fine set of massive armor without looking rediculously bulky.
Several variations of the standard medieval soldier helmet (small steel cone) could perhaps also be made. One with a noseguard, one with eyeprotection like the Norse used (great for dwarves) one with a chain coilf under it, and also a loose chain coilf could all be great options.
As for light armor, some simple clothes with a leather chestpiece over it, covering the front and back and having some belts and pouches attached to it could be great to have. Something like Geralt of Rivia wears in the witcher.
As for weapons, more medieval designs would be good to have. Assasin's Creed 1 might be good reference material for weapons and especially for realistic medieval armor that the guards are wearing.

forgot the hair suggestions, well here they are.
Longer hair for women. right now the men can have longer hair than women with some hairstyles.
Short straight hair combed back for men, a variant could have a small ponytail at the neck. (like that one stock hairstyle in Oblivion)
And here is a suggestion for mace weapons: a typical medieval spiked morningstar as its usually depicted.

Arms and Armor will address some of these equipment issues. I'll be (eventually) replacing all existing armor with more realistic types. Among the changes include replacing "Studded Leather," splint body armor, and scale limb armor, none of which ever existed.
I'm not entirely sure what approach I will be taking yet with armor, however.
I've already begun working on replacing the weapons (meshes for all longswords and arming swords are completed).

There might be some good examples of light armor in Assasin's Creed. Like what the townguards are wearing. I think its padded cloth or something like that.

You need to be careful using games as a reference, though. As can be seen in DA:O, often they put the "cool factor" as a bigger priority to realism.

I am tossing the idea of Heraldric Surcoats and and Chain. My freinds who have the skills and expericence are being kind and helping me in this my goal though lofty will be specific Heraldric armors for all the areas ie. Redcliffe, Denerim, Highever, Amaranthine, and the assorted Bannors once I find more Heraldry. I may be stretching it out on a limb but I am going for the functionallity and hopefully get the cool factor at the same time.

Its pretty much just Altair that gets the cool factor in Assasin's Creed, all other characters exept for the assasins look quite historical to me.

Some leather caps and hats might be good as light armor, might work for mages as well.
