I took Varric,Anders, and Bethany last time any suggestions?
Also who is best to take with me for mark of the assassin?
I don't care about battle strategy I want intresting conversation.
What party members have the most interesting dialogue in Legacy?

Haha, you're as bad as me.
I tend to take everyone through each playthrough to experience all dialogue. Fenris and Anders are both interesting to take in MoA; so are Aveline and Isabelle. Varric, of course.
Either sibling is good for Legacy; especially a Grey Warden sib. Varric and Anders are my two favs. to take with me there, so. :/
It also changes if you've romanced someone. Fenris is fun to take along, flirt with Tanis in MoA, and watch him get all possessive and growly.

I might wait until act 2 then...

Oh wow. Yeah it's best to wait with BOTH of those DLCs until act 2 at /least/, if not until end game. :/ Not only are they way easier game play wise, but you get far more interesting conversations.

Theoretically, it'd be one's sibling, Varric and Anders. However, I can't leave Merrill behind. It just doesn't work.

I take Merrill with me as well. I don't take Anders with me - his dialogue at the end of the DLC contradicts his Act II "Tevinter Amulet" quest and doesn't really make sense in the context of the narrative, and a certain incident doesn't really make sense given his symbiosis with Justice. It felt really bizarre to me. Warden Carver, Varric, and Merrill were the three companions I took through the storyline.
