I always build my rogues by these main 3 stats
20 STR
Max DEX
30 CUN
Now I know rogues usually roll with light armor...but for my dex dagger, I was wondering... can I still have good dps if I put my toon in medium armor?

I like to get Ancient Elven Armor. I think that's 22 Strength. I don't have dlc armors and think battledress is overpowered.

I usually run CUN based DW dagger rogues (though I have been switching it up a bit lately), so I still prefer light armour for my rogue. Battledress is pretty OP'ed but I still love it, though I am also partial to the Felon's Coat (and it doesn't require DLC). Like @cJohnOne, I have used the Ancient Elven on one DEX based rogue, but eventually went back to Felon's (often put my Arcane Warriors in the Ancient Elven).
So I guess my .02 would be try out some Med armor and see how you like it, but maybe have the Felon's coat on standby if you need to change things up.

I occasionally equip my DW rogues in heavy armor. It increases the fatigue factor a bit, meaning that it takes more stamina to perform the various talent-based moves, but some suits come with built-in stamina bonuses, so the two may more or less cancel each other out. Sigrin in Awakening can wear Armor of Diligence (heavy armor) and do perfectly well equipped that way.
Medium armor is probably sufficient for most occasions, but it never hurts to try out various different options.

Yes, and it's actually a really good idea since a dex rogue fears the special attacks such as Overwhelm, against which Defense does nothing. Higher armor rating keeps you alive.
Short guide: Keep CUN at 22 including Fade bonuses. Get your strength to the level you need for you armor of choice and put the rest in DEX. Now you have a DEX rogue with good armor and your damage will be exactly the same, as strength and dex add the same damage and attack rating boost per point. So the tradeoff isn't damage vs armor but rather defense rating vs armor, and your defense rating should eventually be a tad higher than it needs to be.
Note that if you are a real min-maxer you will make sure you meet the minimum requirements for armor AFTER equipping relevant stat boosting gear (such as Key to the City) because that way your Defense will be slightly higher. But really, I wouldn't worry that much about it.

Of course, why not? If you are planning to backstab most of the time and use activated talents less frequently, then the increased fatigue is not a concern.
In fact I used the massive warden commander chest piece (tier 4) for it's +15% critical/backstab bonus on my dwarf DW rogue. But I sticked to red jenny seekers,cadash stompers & helm of honnleath.
If you care about dps, and weilding dual daggers, then probably stick to gear that boosts critical chance and crit damage. If your strength is not high enough, temporarily equip all +str gear you can find, equip the armor pieces then unequip those +str stuffs.
But if you mean to use activated talents a lot, probably felon's coat is best (excluding battledress). Equipping medium or heavy armor that don't boost dex, defence, dodging chances, etc. will actually reduce your dps and as a side effect causing more fatigue. But i guess that amount is not too much. I'd say if you are dps hungry and a backstabber, get all those good +crit/backstab gear.

Good point. The backstab boosters are all light armor, but you could use some pieces of massive armor like you suggest or just keep a set for tough fights, like if you're facing overwhelms or enemies that cannot be backstabbed.
Stamina isn't really an issue for rogues I think. Rogues, at least of the backstabbing variety, are mostly autoattackers rather than talent spammers.
