Short answer is: "You can't."

Longer answer is:  If  you saved a copy of "DragonAge2.exe" from the previous patch (I have seperate copies of the executable going all the way back to v1.00) and  the issue you're trying to correct is one that is caused by the executable itself, then  you can replace the current one with the previous one.
(Obviously this could be done for the entire set of files that might be changed by a given patch.  I actually did a file-by-file comparison for DA:O 1.02-to-1.03 and posted the result here as a Project, but that was a special case...)

Alternatively, if you saved the previous version of the patch as a standalone, you could un-/re-install the entire game and then re-apply just the patch you want.

If you uninstall Dragon Age II from your PC and register the game on Origin you can download the unupdated version of the game.

But if the OP wants to roll back to v1.03 (for example), outta luck...
