'Orlais has brutally occupied Ferelden, its rather logical that the Fereldans perceive Orlaisians as cruel people.
That's for the 'cruel' part of Orlesian character (I guess it would be the easier part to correct in DA3...)'
Occupator form every country is cruel. That's why there is word "occupation".
Hah, Orlais concuered Fereldan but in history England occuped France.
The story of the Orlesian occupation seems to be more inspired by Edward I's occupation of Scotland than by the Hundred Years War. And given the co-existence of more or less vaguely English and Anglo-Saxon names with Scots-Gaelic ones (Alistair), in some ways Ferelden is more similar to Scotland than England.
It's a mish-mash (pastiche) really

Ferelden reminded me more of Poland than England. Maybe because I was born there.
That's...strange. As far as I can tell, there is nada zilch zip Polish in there. There is some German, though that may be unintended as I've read Gaider took some names etc. from roleplaying sessions that he attended.
Some of the names and terms, for instance (Landsmeet = Landtag, some of the personal names are medieval German, though most are either modern English or Anglo-Saxon and Gaelic and so on).
The landscape? Looked pretty generic and unidentifiable to me, certainly not typically English.
