If this is your only gripe with ME, then it appears the problem with the game is all on your end.  Also, there's a statement made in-game for why the warehouses and such are pretty much uniform.  As far as the Rachni (and other alien) underground areas are concerned, that could be easily overlook.

The inventory can be managed.  Many people have done so.  First time with the game, I was wondering why I didn't have the option to mass delete anything, but it's not an issue.

Believe it or not I love ME 1 but these "ME 1 is better" fans blow up any issues they have with ME 2 or ME 3 out of proportion while they completely ignore ME 1's issues.  It's hypocritical.

1's sidemissions had some good stories and dialog but they had repetitive gameplay and environments.  They consisted of getting dropped off in the mako driving the mako in a barren environment for a few minutes until you got to your destination which was either the same warehouse, bunker, or cave.  After the first few ones it became very repetitive and monotonous.  I preffered the gameplay in ME 2's sidequests.  If you combine 1's dialog and storytelling with 2's environments and gameplays then you have perfect sidequests.

This didn't take away from any other aspects of the game though.

They made up a very large portion of the game.  Take away it's sidequests and ME 1 becomes very short.

Well i agree...was just replaying ME1 yesterday and it felt great.....despite the old graphic and the bugged combat system i really enjoyed it, it felt like a true sci-fi game. I especially enjoyed the music (synth one) in ME1 which remained unmatched for me, it was suited for an sci-fi game and it created very nice moments and sensations inside the game i will never forget.

I also miss the loot/equipment system which was far from perfect but still present.
I also miss the Mako exploration part in every central mission and really liked the planet exploration in the variety of side-quest, although the re-use of structure was kind of embarassing exploring the planet was still nice because the experience was credible and believable (desert planets, small outposts...)

The galaxy in ME1 felt like big and unexplored, full of pirates and dangerous places to visit.

i'll take copy and paste planets missions involving flags than being a delivery boy for randoms on the citadel.....i find it amazing how people say shepard was too busy fighting a war than having side quests...... as he/she has time to roam galaxys collecting artifacts.

People make way too big a deal about the fetch quests.  My last ME 3 playthrough I hardly did any fetch quests and I still had a high enough EMS.
