I've played Infiltrator and Vanguard, and now am planning to play the whole series on Insanity.
What class would you recommend?
Best class for first insanity run.

Probably Sentinel for the armor power. Have you checked your account? Maybe you received the free Cerebus Network add-ons promo like I did. One of them boosts your shield strength and fast recovery, and improved movement speed. I don't use it, but when I saw a video of someone using it on Insanity I became very angry because they were a Sentinel and they were running around not worrying too much about cover.

I beat insanity with an infiltrator, you can easily hide and get to a better point if they start to over power you and you'd be able to pick off enemies strategically.
I died a lot though... but it was really fun

Soldier for me personally. You don't have to worry about powers, access to the best and most powerful guns and you can basically work with any squad.

It greatly, greatly depends on the circumstance.
For instance, in ME1 you need to unlock Hardcore and then Insanity, so you already have a character. In that case whatever class you use at level 50+ for NG+ is substantially easier than a new character. Like an order of magnitude in some cases.
ME1 also has a quirk in that probably most of the hybrid classes are a little better than the pure classes, at least in my opinion. Soldier is the best at tanking with heavy armor and immunity, but you can get most of the tanking, some tech powers, and better sniper rifle handling with the Infiltrator... just take a weapon bonus and you will only be short 1 gun compared to the Soldier. Or take Hacking on the Infiltrator and you are a more powerful combat engineer. Or consider Sentinel. You get the most powerful biotic ability, the biotic semi-tanking ability (Barrier) and can take Singularity as the bonus (if you played Adept already), plus tech and medicine (Neural Shock). Vanguard also gets a couple of the best biotics, plus good weapon training (Pistols and Shotguns), and Adrenaline Rush to reset cooldowns on powers.
In Mass Effect 2 the classes are balanced fairly well as far as actual power goes, although they have different learning curves and ease of use is not the same. Vanguard is near the top in power (basically the best vs basics to mid tier and worse against bosses), but takes more to master and also can be difficult early game when you don't have many talent points or upgrades. Sentinel with Stasis as a bonus is probably one of the easier classes to play overall, and is also very powerful. It doesn't have the learning curve that Vanguard has, but still dishes out decent damage. Infiltrator is on the other end of the spectrum. He is a little easier to get into on Insanity, but his skillset makes him best vs bosses and he lags in cc and capability to grind though hordes of basics, especially early game and without the proper bonus power. Soldier is probably a good balance between power and learning curve and is a good choice. The pure casters are a little harder to get into, but they can be powerful once you understand their role and if you take complementary squad mates.

Back when Mass Effect originally came out, I did some reading and people seemed to say the same thing: Engineer is the hardest ME1 class. I figured if I could beat hardcore/insanity with the hardest class, then any other class would be a breeze. Now, I'm not one to agree that Engineer is the hardest class, but I beat hardcore and insanity with it. When I went back with 2 other classes, sentinel and vanguard, it was a a cakewalk.
I carried that same mindset over when I bought the trilogy on PS3. I ran through on a fresh Engineer and any class after that blows through nearly every difficulty. Engineer is a great way to teach yourself to use your teammates, especially early on when you have very few powers. Makes stepping over to a more independent class that much easier.

I'd say the Adept was preaty darn easy to use on an insanity run. Singularity, throw, and stasis are the best powers in the game. You can use whatever you like in ME3, since insanity level is ridiculously easy (especially with biotic explosions).

personally do soldier in all an enjoy it the most, never got into adept find it boring as hell an hate taking cover, with soldier im constantly on the move and rely on nothing but me an my faithfull ole AR an pistol.
If i had to pick a sort of caster class id need to go with engineer as i luv seeing my turret/drones burn things up
