I'm wondering if the legend save will overwrite my original ending choice if i decide to load it up and choose a different ending? I've heard that some people have issues with the save not updating when they do this. Does anyone know if the lack of updating is true?

I think you'll have to be clearer what you mean by a 'legend' save and 'updating', though I have an inkling what you are trying to convey.
If you play through as normal there will be very few save points after the battle on Earth (launching of the Thanix missiles); no manual saves are possible once the Base of Operations sequence has started. The only saves then are autosaves, the last being the return to the Citadel (after Harbinger flies away) before entering the beam.
Upon completing the game you will be taken back to before the point of no return, i.e., before the attack on the Cerberus base. (Any forthcoming single player dlc will have to take place before that.) Yet the return to the Citadel save should still be present to use should you have autosaves and choose to use it. So you can see the other endings from the one game (I've done that a few times myself).
Still unsure about the 'updating' you mention, though I think the above covers what you're asking.
