I just started playing DAII, as a Female DW Rogue. I'm playing on Casual because I'm more interested in the roleplaying aspect of the game. That being said, which characters should I include in my party?
Best companions in terms of dialogue/plot?

It depends what you're after.
Varric and Anders together work well for game-play and excellently for dialogue. Anders and Varric are also good to have around for the plot. Then you can fill in your final slot with whichever companion you prefer, but Varric and Anders are awesome together.
Varric also has some good dialogue with Merrill, so you could fit her into that setup and enjoy their banter as well.
If you want Hawke's Sibling in your party, which would be Bethany for a Rogue, then i would suggest using her with Isabela and Merrill, purely because the Dialogue is funny between them all.
If you want an angrier atmosphere then i would suggest Anders, Fenris and possibly Merrill. Because they all end up snapping at one another.
But if you're playing purely for the sake of Role-Playing Aspects, then i would suggest you just change your companions regularly. That way you can enjoy all of them and learn which format you like best.

I would mix it up alot. As rogue you can have any party you want. In act one i suggest bringing Anders, Merrill and Varric if you intend to be mage friendly, if not, then Fenris.

Every character is good for a story feel, However Aveline is emotionally a brick as in instantly "friend-zoned" with no emotional attachment. Anders likes to force a relationship.. Varric is gonna be the most lovable... Well in my eyes.

Different quests with different companions. Fenris' brooding attitude changes quite a bit in MotA, but not much joy elsewhere.

For dialogue it has to be Merrill, she has me in stitches every time she opens her mouth. Isabela is really funny too.
I'm guessing this is your first playthrough (otherwise it would be a really odd thing to ask, well unless you had amnesia). One tip I would give a new player in regards to roleplaying is don't start thinking rivalry is bad, it isn't the same as the disapprove in Origins. If a character disagrees with your Hawke a lot, let them naturally become rivals don't try and fight it to end up friends.

Just played a mage and got Carver.. He is a lot better than Bethany! Make him Warden and you will be really glad you had him along. His exchanges with Fenris and Anders are priceless! I have some on this short clips video

That greatly depens on how you play imo. I like having Varric and Anders along and then switch between the others. Banter between Isabela and Aveline is funny in a ****y kind of way.
As for quest dialogue I would say Varric and Anders(if you romance him). Anders dialogue changes more if you romance him than any other character, which I personally like.
Personally I switch bewteen characters a lot. I have come to love each of them and have found different situations and quests where I prefer to bring them. Imo experiment:)

Ya definitely switch companions a lot if you want the RPG aspects of the story. If you have a favorite battle team, use other teams on your buy / sell ingredients / talk to people errands. Is fun and will not set you back on combat

Also, different characters have different lines depending on who is in the party make up at the time you talk to NPCs (the meeting with King Alistair in act 3 is good if you have Aveline, Isabela and Anders all in your group at the time as each has some comment). There is a scene in Sebastian's act 2 companion quest that's good if you bring along Isabela and Merrill--and a funny line from Isabela in another scene in the same quest if you have done the Act 2 Feynriel quest already (and took her there too).
Varric has the best banters of all of them with ANY companion, and seems the most apt to interject something in any conversation Hawke is in, so unless I'm an archer rogue he is with me constantly. Every companion has their moments, my advice is mix/match and see what you like best. I usually travel almost all of act 1 with Hawke's sibling (from an RP perspective it works for me--Hawke is reluctant to let the remaining one out of his/her sight). Carver has good banters with Isabela, Merrill and Fenris (esp if you have Fen, Varric and Carver in the group, one banter will be a three way conversation with Hawke joining for the final word in that one!). Bethany has good banters with Isabela and a couple good ones with Anders, that actually made me hate him a little less. With the exception of Varric and Bethany, Anders is pretty harsh with all the other companions (and some actively antagonize him like Fenris and Carver--so I can understand that position), though he has a couple nice convos with Merrill (she asks him about Ser Pouncealot--and talks about Duncan/Grey Wardens--though i assume the second convo only happens if the import is a Dalish Warden?).
Isabela/Aveline are a good counterpoint to one another (Isabela is especially interesting in Aveline's Act 2 companion quest), where you can see the relationship growing from mutual disgust/dislike to a genuine respect and affection for each other in later chapters.

Anders is definitely the one who will get into the most confrontations. Fenris is close behind from the opposite standpoint. Merrill is just fun to have around. Between the three of them you can get a pretty comprehensive dialogue on the whole mages and Templars thing.
