What we have realy preserved from original fruits ? Color, taste or smell ? We used the sugar, vinegear, water, fruits - little bit fire - to create final form - JAM. We have to squash fruits, mix them with sugar and other stuff, but that´s no more that same fresh fruit, it´s different, changed - we change it to use it for another time, taste is different, form is different.
Ask yourself, why we are preserving fruits in form of JAM?

We are nothing more for Reapers than these fruits from above... they luquified us and whatever we will become it´s no longer a person, it´s just maybe DNA but nothing more.
Do you think that all those victims would like to kill whole civilizations only because they were uplifted ? None would...
Reapers do it only because they can - it´s very questionable what was realy preserved from that former victims - most probably just a genetic code, but if they kept the minds of their victims they would probably start shooting each other.
Purpose of life is to live - enjoy all those chalanges: finish the school, start work, find a love, family, children ... and not to become some kind of abomination which would live for eternity and commit genocide upon the innocent people.
Legion mentioned that speaking with Nazara was like speaking with many organic minds - overwhelming, but ask yourself again - what organics would commit such acts upon the others ?
None is answer, what left from their bodies was either mindwashed or AI found a way to synthesize hardware with organic material, well they already prove it that they can do it .
This was gift from Reapers for Geths, it´s look like organic brain - what if it´s realy point why they are ''preserving us'' their poverhungry AI found a way to gain knowlendge of organics and yet keep the form which they want.
Geths were building Dyson sphere to achieving such a level of intelligence, they could be at same level like Reapers but they would be limited by connection to this structure, in danger from destrucion of Sphere.
Reapers have such Dyson Sphere in each of them, what if so called "preservation" is just a way to use our genetic material - for creating super computer for AI ?
From what we could see in game, the AI will sooner or later achieve own hardware maximum which will limit their processing power, what if synthesis of AI and genetic material can improve those levels into new highs ?
And now ask yourself, why Reapers "preserve" organic life ?

Motivation of Catalyst - Reapers:
Why the Catalyst need so much synthesis ? Well if we are going from these few facts:
- Legion : connection with Reaper was overwhelming, like a speaking with thousands of organics at once
- Catalyst : I control the Reapers
- Catalyst : The Reapers preserving organic life in Reaper form
- Catalyst : I am collective intelligence of Reapers
- Catalyst : Harvest own creators in order to creat first true Reaper, despite that they did no aproved
Now little bit speculations:
- Organics - are individuals by merging them into Reaper form you are taking from them their freedom, they must be controlled or mindwhashed, if they had any kind of control over Reaper body they would rebelled against Catalyst.
- Catalyst - Organics: Catalyst must have full control over Reapers, to prevent any kind of rebelion which he also proved right, when he harvested his creators which did not aproved, in order to create first true Reaper.
Why is synthesis best solution ?
It´s not best solution for us, but for him - everyone in the cycle will gain unkown space magic - Reaper technology which proved to be unhealty for minds, bodies of its victims - every single which gained such a technology has changed into husk.
Why the Catalyst was looking for synthesis ?
Reproduction - gaining control over bodies of organics, as he said - organics have limits, synthetics have none if you allow them to defeat organics. He was trying similliar solutions but he always failed - in order to achieve synthesis or what he called synthesis he was looking for balance which would alter bodies of organics in level which wouldn´t harm whole body but he always end in huskdoom. If Organics present chaos and synthetics order, than without full control over former organics would chaos prevail even after synthesis.
