I don't mind playing as Shepard. People can bi*** about playing a new hero, but Shepard started this war, it's only fiting the he, or she will end it. Besides Anderson is old, and still fighting like a young soldier, so ya. Also Shepard is just 30 years old ( minus the two year death which would be 32) and Anderson is like 54 or 55. Ya I think we can still play as Shepard, or do what they did in Dragon age awakening.
Import you grey warden, or create a new character. It's a win win, only you play as Shepard.
I'm pretty sure that shep's gonna be dead either way if s/he isn't brought to a hospital immediately. As a matter of fact, I think that if Shep survives the war, then s/he would probably become an admiral, meaning s/he wouldn't take part in any heavy fighting. S/he'd only be commandeering ships around.
Shepard still wants to fight. He/she tells Coates that he/she is just a soldier. Shepard also tells this to Vega in Purgatory. I don't think Shepard would be happy to sit back and be an admiral.
I could trust that kinda behaviour to a renegade Shepard, but not to a paragon.

As you said, Shepard is a soldier. What does a soldier get when he's distinguished himself? He gets promoted. And since he's a normal soldier, he'd most likely accept. He wouldn't say no and continue doing what he thinks is best. He does that what his superiors think is best, because he is a normal soldier, and the most distinguishing part of a real soldier is to follow orders. That means, that if his superiors think he'd be of most use as an admiral, then he'll become one.
Shepard wants to be the best damn soldier s/he could ever be. It doesn't get any better than admiral.
