I've got to say this, so don't think I'm being a jerk or anything. But that's totally subjective.
The symbolism is there for people who want it, but its not forced down our throats. Much like The Matrix - it can be treated like an action flick or it can be an exploration into the human mind and a debate on what reality really is.
Personally I see a lot of symbolism, moreso in ME3 then any of the previous games. Which is suprising for the game considered the most action-oriented of the three!
+1 though I think the symbolism was in all 3 games. We just didn't understand the context in the first game. When you go back and try to play it, everything suddenly jumps out at you
