Mass Effect 3 has several Z-Fighting issues where textures flicker (Catalyst scene with the Reaper ships and such flicker like crazy). It's a game issue, because I tested it on two different computers with two different OSes (Windows XP and 7)
True, but ME2 has even more such issues, i'm sure.
ME 1 has a very very annoying issue that makes the dialogue stutter on random intervals but frequently throughout the whole game. Possibly hardware/OS/drivers related but very frustrating. Also, have to say ME 1 has clearly the worst gameplay mechanics of the trilogy.......
Since we are talking about glitches and bugs:
ME1: The dialogue glitch really drove me crazy. I had to use subtitles to get all the info from the dialogue. Funnily enough, it happens on my Win7 Notebook but does not happen on my Win7 Desktop. Not really sure what causes it.
ME2: If there is a glitch, it usually crashes the game. I have experienced the infamous crash on Illium (supposedly caused by a soundfile(?)) and the crash when trying to change your hotkeys. Both annoying, but to some extent avoidable.
ME3: A few annoying things, like the Excorcist heads in dialogue, the bear trap in the cockpit, the Journal. Once in a while a crash (usually in the menu before starting the gameplay, though). All in all annoying, but not as much as the dialogue thing in ME1.
