Squirrel Girl was created by the artist who cocreated Spider-Man as a one shot joke character, who's powers were completely absurd, but still kicked all kinds of ***. As for Ant-Man, it's comic book science.
Ultimatly, you just have to accept it as ridiculous fun. Trying to rationalise it works with some characters, but to much is to far out there.

Having just skimmed the wiki on this guy, I see several episodes demonstrating mental instability.
