Real time: Starcraft: Broodwar. Still play it to once in awhile. I miss the lurkers in SC2.
Turn Based: Alpha Centauri one of my favorite games ever.
Tactical: Frozen Synapse, I recommend people trying this game you even get two copies when you buy it and there is a demo on Steam.

Sins of a Solar Empire.  Full stop.

It has the perfect balance of complexity and scale, along with actual time to think instead of mindlessly rushing your enemies a la Starcraft.  Entrenchment is pretty necessary to get the best experience from it, and Diplomacy helps too.  Those are the two mini-expansions.

No love for Cossacks? That game was ridiculously epic. I got my ass kicked more often than not, but that was one of my favourite RTS games.

Total War series on balance is my most favourite strategy series ever. Rome: Total War with one of the Roma Surrectum, or Europa Barbarorum mods, or Medieval II: Total War with Broken Crescent or Third Age are games that I could replay endlessly. I loved Medieval: Total War (the original) out of the box the most, though.

I also have a soft spot for the Age of Empire games (I/II/Mythlogy) and Total Annihilation. That extends to Supreme Commander as well.

Some of Paradox's games are also quite enjoyable (Europa Universalis, Crusader Kings, etc). Stronghold also a good one.

Moving into the Strategy/Sim type games, the Anno series and Majesty are some games I've pumped time into. Been playing a bit of Jagged Alliance 2 recently and am having a blast with that, so I guess that counts too.

Mostly agree with you.
Cossacks kick ass! It's a shame it's been less known than it should be. American Conquest was also epic, I like the 'chance' addition to this game. And Age of Empires series (the one you said) very truly amusing.

Also TBS:

Medieval II
Civilization IV-V mixed.
Heroes V and King's Bounty.

Never much of a strategy game fan, though I have played Starcraft, Warcraft, C&C, Homeworld, and a few others.

There is one, however, that really stood out for me, and one in which I actually did sit down hour after hour playing, and that is Age of Mythology. It was to me the definition of fun. You can blow up and scatter armies with godly powers, recruit mythical creatures, traverse the realm of Hades, build giant monuments, and heck, learn some basic mythology on the way. The game had epic written all over it =D.  Heck, I'm going to have to reinstall this tomorrow.
