Basically I like the tactical and RTS strategy games.
However I find the managment ones like Civilization and Europa Universalis mind numbingly dull. Same with stuff like Sins of a Solar Empire, the games in that go on for too long and are really drawn out.

-Masters of Orion 2, a 4x strategy game yet to be matched or surpassed in over 20 years. Many have come close, but none have managed to achieve it's perfect balance of fun.
-Masters of Magic, to date it's the definitive 4x fantasy strategy game, guaranteed to keep you up taking turns, but sadly the graphics have not aged well.
-Panzer General 2, one of the best World War 2 strategy games ever.
-Fantasy General, it's Panzer General with a Fantasy theme, and some unique features of it's own.
-Warcraft 2, perfected the "Build base, squish opponent" style of RTS.
-Starcraft, took the foundation Warcraft 2 layed, and perfected balance.
-Age of Empires, the definitive "Lead a civiilization through the ages" RTS
-Civilization 2 and 3, the definitive "Lead a civilization through the ages" TB game.
-Alpha Centauri, Civilization on an alien world with it's own unique flavor.
-Homeworld, the definitive Space RTS
-Valkyria Chronicles, a perfect melding of TB strategy with real time elements.
-Total War series, while the TB portion in the series often suffers from some interesting design decisions (Distance from capital, Inquisitors), those mistakes are never repeated twice, and above all, NO game has ever achieved the likes of it's large scale battles.
-Heroes of Might & Magic (1,2,3), often challenging maps with interesting combat, and never fails to keep you wanting to take just one more turn to grab a goody.
-King's Bounty (Modern), Builds on the lessons Heroes of Might & Magic taught it, introducing story with great cuostomization of the hero.
-Evil Genius, Part RTS, part Adventure, and boat loads of fun. You haven't lived until you've captured a goodie-two-shoes in your carefully designed traps and watch him get beat senseless.
-X-com, the very best squad level TB game ever, with a compelling story and research tree. Another Microprose game none have yet approached.
-Jagged Alliance 2, It had style, it had challenge, it was a game that truely required strategy in and out of battle to win.
Then there's honorable mentions: Age of Wonders, Shattered Union, Total Annihilation, Age of Mythology, Rise of Nations. All good games, but unlike the above, weren't groundbreaking or all-around-awesome.

Red Alert and Tiberian Sun got me into RTS games.
Starcraft got me more into RTS games.
Age of Empires 2 and Rise of Nations were fantastic fun back in the day.
Company of Heroes is just incredibly fun and the sequel looks great.
Currently, I think the Total War games are just about perfect for me. Just do a Grand Campaign, and you have the turn based map with the real time battles with unmatched scale. And the campaign map lets you create your own narrative that no scripted story could match.
I've only started to get into Crusader Kings 2, but thats pretty interesting so far.

I enjoy Tactics type games such as Tactics Ogre or FF Tactics
Valkyrie Chronicles
Panzer General series
Dungeon Keeper was fun
Birth of the Federation was very good but glitchy
Warcrafts and Starcrafts were okay but prefer turn based
Front Mission series (not the new action fps one)
BattleChess
Alpha Centauri
Homeworld series
Settlers

Nah. I remember the oldies too and I am only 30. To the kids that probably seems really old, but that's just a lack of perspective. I remember telling someone in WoW that I was 24 and he just couldn't believe it. "You're too old to play*. Sigh, you're practically still a kid in your early twenties.
Anyway... Thanks for mentioning Dungeon Keeper. That's a classic. I don't know why it felt so good to pull pixie wings, it just did

- Starcraft series
- Homeworld series
- Dawn of War series
- Company of Heroes (best RTS ever made in my opinion and my favorite strategy game of all time)
- Disciples Series (especially the 2nd installment, wicked game)
- The Total War series (Rome being my favorite)
- Majesty series
There are a lot more but those are probably the ones I've enjoyed the most.

It's the ultimate jack-of-all-trades strategy franchise. Want to play it like a RTS? You can do that. Want to play it turn-based? You can do that. Want to slow it down to your pace? You can do that. Want RPG elements? Yup. Want full control over your empire including diplomacy? Yup.
Navy battles, massive armies, incredible depth on the world map screen. It has it all. Obviously, it's overwhelming for a noobie but I don't think another franchise comes close to the depth TW presents. It has a little of everything. And it's gorgeous to look at too...
TW is the most versatile strategy franchise in the industry. It does everything.
