I'm looking to buy origins and there is a lot of dlc so is it worth getting all the dlc? Is there some to avoid or not worth the money? Are there essential dlc must buys?

Here's my recommendations as a story nerd:

There are three story DLCs that can be played during the main campaign. The Stone Prisoner is the best of the bunch. It adds a really good support character with a lot of funny dialogue, a series of fun quests and some pretty outstanding gear.

Warden's Keep is a fun side journey that gives your Warden some new abilities and a much-needed storage chest, which could be very valuable if you're playing on consoles. But the gear is fairly average and the quest is kinda short.

Return to Ostagar is fairly forgettable. Decent gear, but there isn't really any story to it: you spend the time running around an abandoned fortress chasing after a particularly nasty darkspawn mage. On the other hand, if you're seeking some closure for your character, it's not bad from an RP perspective.

Post-DAO, there is an expansion called Awakening. It has about 20 to 30 hours of extra gameplay, provided you do absolutely every quest. The companions introduced in Awakening are fun and the story is pretty good, but Awakening is notoriously buggy.

There are also four  DLCs that, if you complete them first, import extra gear into your campaign. Two of these DLCs are set after Awakening and are called Golems of Amgarrak and Witch Hunt. GoA is designed for players who thought DAO was too easy; if you get it, expect to get your ass kicked frequently. (In other respects, it's a good horror story.)

Witch Hunt sheds some light on what happened to one of your companions from DAO. If you romanced this character, it's practically essential. If you didn't, then it's just a fair side story — entertaining, but nothing more.

The "side" DLCs that if you play through will give you some new gear for your main campaign: Leliana's Song and The Darkspawn Chronicles. Leliana's Song has an engaging plot, particularly if you like the character Leliana, and and it serves as a bit of a preview for what to expect in DA2.

The Darkspawn Chronicles is just … eh. It's an alternate universe story where the darkspawn win. You play a darkspawn who runs around killing the main characters from DAO … and that's about it.

If you haven't bought origins yet, then you may consider buying the ultimate edition; it is quite cheap now and provides good bang for your bucks. Otherwise, you may decide from what Face of Evil has said. If you want to skip a few, I'd say leave out Witch Hunt, Darkspawn chronicles, Leliana's song for the time being. You can buy them later if you really get soaked into the game. If you want to have more unique gear, the stone prisoner, warden's keep, and RTO are worth mentioning. But I'd stress again that if you have not bought the base game yet, consider checking the prices of the ultimate edition. :)

I agree with Blazomancer. The Ultimate Edition gives all the dlc for a very good price.

I don't play DS Chronciles much, although it does unlock a very nice item if you do play it. Most of the dlc has the same benefit. Once you play through the dlc, it unlocks items or unlocks other benefits that can be used in the regular game -- the next time you play the regular game.

One caveat: don't buy second-hand. There is a code that unlocks the dlc that must be registered here before the dlc will be playable. With a second-hand game, the code may already have been redeemed.

The good news is that the dlc is worth the bit more you pay to buy the Ultimate Edition.

Well worth it.

Ultimate is only about $20-$25 at Amazon. Even if you own the base Origins already, I'd think that's cheaper than buying just Awakenings and a few DLC's separately. But then that may be a US-only thing and I don't know where you are.

I haven't played all the DLC's yet, but I thought Stone Prisoner, Leliana's Song, and Warden's Keep were nicely done. Return to Ostagar was, IMO, the laziest of the ones I played (mostly just a recycled map with recycled enemies). On the other hand, it has some pretty powerful gear that you might want if you plan to import a save into Awakenings. Darkspawn Chronicles was fine as part of the Ultimate Bundle, but I wouldn't recommend buying it separately. Bits and pieces of it are interesting, but mostly it's very predictable and repetitive. I would never replay it.

I haven't played Golems, Witch Hunt, or Awakenings yet.

Yes, DEFINITELY buy the ultimate edition. It's much cheaper than buying all the DLC separately. I'd say that Stone Prisoner is the "must buy" of the DLCs.
