Doable, but it's going to take a TON of work.
Not only do you have to remodel the nude mesh, but it also means modeling new armor and clothes. And this assumes you're JUST replacing one of the bodies. If you want to replace the Elf and Dwarf female bodies as well you need to redo the armor and clothes for THEM, as well.
Now what would be GREAT is if there were some way to create some sort of module that could automatically remodel the equipment using a moph....

Theoretically you could apply non-uniform scaling to the meshes ... that is, to make a model more "chubby" or "skinny" , you would scale the x/y coordinates slightly, while leaving the z-coordinates alone. However, in addition to having the same problems as scaling of animated/skinned meshes in general, non-uniform scaling requires recalculation of the normals/binormals and tangents, and does weird things to the quaternion rotations - which is why I have not added this to my DATool yet.
