And it only came with one disk. The case is big enough where it seems like there should be more? Did I get ripped off? What am I missing? 

If tried google searching 1000 times and there are no pics of the content that comes with the SE...so I have no idea what I'm missing

No you're fine, its meant to be only one disc. The special edition content is just some new combat styles, monsters, items, stuff like that and its all included on the disc.
