I've seen videos where the player can choose between Morinth or Samara in their battle, but for me that option has never appeared. From what I've been told, Morinth has a mind control power like AI Hack but for organics. What do I have to do to get the option? Admittedly I've never seemed to have enough renegade to choose the final super-renegade option in that conversation, so is that possibly it?

Yes, Morinth has a mind control power called Dominate, which works very much like AI Hacking does on mechs and geth except that it's organics only and comes with a temporary biotic barrier rather than a shield. To get it as a bonus power is simple and what you've already guessed: save Morinth and kill Samara. If you've never had high enough renegade ratios to get that option then there's really two options. Either use Gibbed to give yourself a lot more renegade points or do a more renegade-y playthrough than you've ever done before just to get the bonus power. You should not need to complete the game, just complete the Samara loyalty mission by killing Samara and saving Morinth. However, the Morinth conversations on the Normandy are different enough from the Samara ones that you might want to carry on for a while for that.

So I was right, it's that last little super-renegade option. Otherwise, like I said, there's no more dialogue.

Yep. So a renegade replay if you've got the time and an earlier save plus Gibbed to give yourself enough extra renegade points if you haven't. Don't know off hand what the percentage is for this renegade option but I believe it's pretty high, so if you're using Gibbed best give yourself way more than you think you need. ME2's strange ratio based morality system means it's easy to have a lot less than you need for some of these conversation options. This is one of four or five situations like that.
