i'm not talking like fenris or izzy. Let say DA3 your dealing with the mage rebellion. i think you should get a character based on which side you choose. Or you have to choose between two potential companions

So, if you support the templars, you get a ghast with a top hat, and if you support the mages, you get a ghast with a glove hat?

You know, I've been thinking lately, that the major choices in DA3 should always affect gameplay in some manner. Something like the campaign in Starcraft 2 did. One time in SC2 when you had to choose between two opposing factions in the story, you also chose between their different units. Units that would join you for the rest of the campaign.

In DA terms that would mean choosing between abilities, or specializations, or, as you said, companions, at the same time as you choose your path in the story. So, to make the obvious example, when you side the templars you get a templar companion, and with the mages, a mage.

(By the way, since I haven't finished it yet, I don' know if DA2 does anything like this. I'm told that the choices in DA2 doesn't matter anyway, so I'm thinking it doesn't do this.)

Yes, with Vernon Roche and whats-his-face. Except they're not really companions in the DA sense. They just help you out on your journey.
