Good observation.. bi female here. Something that always bugged be about Bioware romances is how unbearably "cute" the lesbian/bi female romances were. ME1 Liara? Naive, shy little girl. ME2 Kelly (not even a full romance, but still)? "I love everyone and I totally adore you". ME3 Traynor? "Oh I'm so cute and clumsy with my accent". DA2 Merril? "I'm cute and naive and clumsy, oh and I totally have an accent". See a pattern there?
Well, all I will say about this is that different people (players) like different things in a LI, regardless of the player's gender or sexuality. I've romancef Zevran, Fenris, and Anders as a male, Alistair as a female, and Isabela as a female, and enjoyed them all.
Leliana, Merrill, and Traynor were all "cute girls." Isabela wasn't, and Allers wasn't (.... no comment on her, but still .... can't say she was "cute," so...). I only knew Liara in ME3 but she didn't seem cute either. She seemed mature and thoughtful. Morrigan wasn't, yes, but if DA:O had been made two years later, she probably would have been a bi option, same as Isabela.
When we look at the men ... Zevran, Anders, Fenris, Kaiden, Steve ... they are pretty diverse. Some are more masculine than others, whether in appearance (naturally elves will look less stereotypicall masculine than humans) or personality (um not all gay men are emotionless jocks; many are very sensitive and perfectly willing to talk about their feelings; for men, gay or straight, it's really all about breaking away from how society thinks you should act, i.e. macho and emotionless, and some guys are not able to do this, true).
How about me, a straight female; I don't want all male love interests to be sensitive romance novel caracatures. I really think BW has done a good job with LIs and I don't think a character should respond differently to a male or female PC. That is, I don't think a male character should be less touchy-feely with a male PC than with a female PC.
