Is there a way to set it up so that you know exactly who will survive and who will die?

It all depends on who you recruited and who is loyal or not. Then your decisions throughout the mission will determine the result. If you mean before going into the mission for the first time then no - it would be extremely hard to get the exact people you want alive/dead right.
But if you want a certain result (i.e Person A and B both dead or only Person C and D survive) then there is an ultimate guide that makes it fairly easy that I can link you to. Major spoilers of course. I highly recommend just playing it through if this is your first run.

In short, yes, but I'd second Soggy Snake and suggest an unseen playthrough first. If you already have or if you want to go ahead anyway this post links to solutions for most of the possible combinations, and the first post in that topic has a flow chart that should enable you to work out how to arrange any that aren't covered.
