So while Asari look different, they are designed to subconciously draw on that same effect.

Because she's got a body that the average heterosexual male would drool over, and most women would envy.
Of course everyone has different take on what is attractive, but Liara does have a modelesque figure.
Liara is nice and kind and everything, but she simply doesn't come with a character I fall in love with. That's what Ashley does to me. She pretty much has all those qualities I love in real women: strong, independent, sexy, tempting, amazing voice, able to take the lead, ... this.
Liara doesn't feel like that to me.
It's a matter of taste.

I like her, but it's not someone I would "date"
I noticed that in my last playthrough I forget to unite her with her "father". Felt pretty bad afterwards.
She looks like a 16 year old to me.

No worries, it's fine to have a preference. Nobody's here to convert you or to tell you what you should like. Just be sure to treat everyone else the same way.
As for Liara, she is a little monotone when she's nervous (or really focused and trying to act professional), just like Garrus is all thumbs and completely awkward when he's nervous around FemShep when a romantic interest is pursued. Consider it a personality quirk, and both of them wear it on their sleeves so it's readily apparent. It's voice acting. An actress as capable as Ali, that should've been your first hint that it was intentional.
Liara's gorgeous, there's not much use denying it, but I think a lot of us go for the scientist, the researcher; her courage, and her moments of weakness without actually being neurotic. (Something I can't say for Ashley, but that might just be the way she was portrayed to [a non-romantic interest] FemShep.)
I suspect a great many of us definitely look more than skin-deep in this regard when it comes to Liara. If you check out the Liara: Stay True and Blue thread, you'll probably see what I mean. If you can survive the occasional disagreement, jokes and smut that are often bandied about in a 2000 page romantic interest thread, a huge (and diverse) fanbase, many of whom possess sundry artistic abilities.
I think the forums are richer for those threads, honestly. In any event, I hope you enjoy your stay.

As I said, it's all about taste. Well, and what kind of LI you would go IRL. My fiancee is closer to Liara than Ashley, by the way, which resulted in some hefty arguments in the past.

I can vouch for the Ashley thread. I lurk in there from time to time.
My Shep didn't have Ashley as his LI, but she is one of my favorite characters.
