Find some planets and scan them. Eezo can be hard to find, but you can check the mass effect wiki on planet scanning to find where the best deposits are. In general, there are far more resources available than you need, so only bother with planets that are listed as "rich" or "good", and only launch a probe if the spike in the scanner is at least half-way up the scale.
