Sheploo is marketing and default Shepard, not "canon" Shepard.

And I use the Mass Effect 2 backround, thank you very much. I can see Miranda and Thane, but Shepard's face is almost non-existent (though he does have the male body).

Inspiration for the Shepard name? Alan Shepard, a man.
Insipration for the story and setting? All of those shows/movies had a male lead. Spock, Kirk, Han Solo and Luke Skywalker. Princess Laya wasn't leading the charge against the Empire.
Sorry, FemShep. The ME movie is also making Shepard a man, as it should be.
