So I got the Ultimate Edition today and downloaded all the DLC. After launching my current playthrough I looked through the missions and saw that my available DLC quests are:
Soldier's Peak
Sulcher's Pass
A King's Confidant
Feastday Gifts
Feastday Pranks
Is that normal? What circumstances need to happen to unlock Witch Hunt, Darkspawn Chronicles, Awakeining, Leliana's Song and the others that aren't activated right now?
Just some questions about the DLC.

The others take place outside the main game, you access them from the menu. Chronicles and Leliana's Song are standalone DLCs, while you can import your character through Origins->Awakening->Golems of Amgarrak->Witch Hunt, in that order.

Yes, its normal.
From the main menu, look at Other Campaigns. All the extras are in there, as they are not main game, but sparate adventures and extensions of the game.
