All it had to do was do an FTL jump . How come Joker just let the Collector cruiser destroy the Normandy? Besides he obviously have better moves such as flipping upwards than moving side to side in the line of fire .
Could the Normandy SR-1 have escaped the Collector attack?

They were taken by complete surprise as they thought they were invisible. The initial strike friend the Normandy's weapon systems, it could have damaged the FTL drive as well. Besides, we got the payoff in the very awesome Normandy SR-2 in the hangar scene.

Forced plot.
Another example: by the time I did the Collector Ship mission in ME2, I had already added the Thanix Cannon, Cyclonic Barriers, and Silaris Armor to the Normandy. Is there any reason we couldn't have attacked the Collector Ship when it began powering back up? Nothing had changed for the Normandy by the time we went through the Omega-4 Relay, but for some strange reason, we had to flee as though we were just as vulnerable as the original Normandy had been.
The plot demanded otherwise.

I LOVE the Normandy SR2 reveal scene. It's fantastic. Not to mention that as a ship, it's a million times better. I didn't care for how they changed it in ME3 with that weird scan shepard had to go through. hated that part. It takes forever to get through it. Not sure of the logic behind it either.
I don't think there was any way the original normandy could have survived because collectors had superior tecnology and in order to survive the suicie mission you need the three upgrades, two are armor and shield related I think. One is the gun. So without those, against the collectors, it's doomed. And even with them, they crash but the ship isn't destroyed and can still get out of there.

Shepard likes the loft. SR2 is bigger and better.

Simply because it comes from absolutely nowhere? Little reaction time, Joker is human, after all.
