 Title just about says it all.
I want to give my shepard long hair. I have long hair IRL and want to get Shepard as close to looking like me as I can
Basically, think bearded biker type.

But ill settle for a long hair model that will sit well on a male's head.

Anyone tried this?

I believe not in the save editor alone. I'd look in the topics about changing Femshep's appearance, hairstyle etc and apply the same principles.
