Grey Wardens, darkspawn (specifically the Architect and Corypheus), the nature of the Old Gods, the Deep Roads (how far do they go, what is beneath them, the Primeval Thaig, etc) and various things related to them.
The Fade, the nature of the Black City (related to darkspawn interest), mages (and their situation), templars, spirits and demons (I loved having Justice and the interactions with various demons, and a certain book spoiler).
Elves, their situation and future, what happened to Arlathan, their culture (especially the Dalish), the Eluvians.
Flemeth. She's a category in her own right. But her daughters also come until that category.
Other cultures. Aside from the elves, I'd love to see more of dwarven, Qunari and Tal-Vashoth cultures (all non-human cultures). Other than that, other human cultures would be interesting too - the Chasind, the Avvars, etc. And countries like Tevinter, Antiva, Rivain, Orlais, etc. Even just the differing landscapes in these places is interesting to me.
Also, orders (old and current) other than the Grey Wardens and templars. Like the Seekers, the Nevarran dragon hunters, and whoever else there may be.
The landscape in general, like the uncharted southern lands, the Silent Plains, Qunari islands (and the kossiths' origins), and the style of new cities.
