 Where is my characters critical hit percentage listed?

p.s. Google is not your instruction manual, Bioware. You made the codex you could have at least listed all the important gameplay information in it.

Dexterity is crit chance, while Cunning is crit bonus damage. See the wiki for more detailed information.

So, to answer your question, the character sheet has that information and you can just mouse over the attribute for more information. Hit ESC and click Character > Attributes, OR hit C and click Attributes.
