I typically run my female human infiltrator as a shotgun/cryo build, while my male is a sniper/nade build. Otherwise, I most commonly play females out of habit; see, I unlocked the appearance options for the males *much* later than the females (blame RNG), and I feel no obligation to abandon my workhorse, the trusty Human Female Soldier. And I'll admit, the relative rarity of the HFS might also have something to do with it.
When you spec into a Human character, do you use the male or female?

Generally, males.
However, I've gotten so used to playing the male adept and engineer, that it feels weird to play male sentinels and infiltrators (because they share the same appearance). So, after promoting all characters in Alloy, I've made a decision:
Male: Adept, Engineer and Vanguard
Female: Soldier, Infiltrator and Sentinel
I may spec the other characters in the future.

I'm a guy and when I first started playing mp and sp I chose male characters. But then I realized that I spend a lot of time listening to them speak and I find that there is a lot of time spent where the character's backside is shown to me... Then it dawned on me to choose female characters so that then I can gaze at some eye candy when there is some down time in between waves :-P

+1 ... I'm sure some Psych Prof. could give us a reasonably boring rationale for this. IMO female classes seem to move quicker and since I rarely camp on the battlefield I really get into the flow of the fight with a female character.

I thought about doing this a few times with the Human Adept or Sentinel when I wanted to make a completely different build, but I would just use a respec card instead. I just think the female humans sound kind of whiny.

Both, obviously. That way I can have a human soldier that uses the claymore and frags, and one that uses conc shot and a saber. Or a human vnaguard with full nova and one with half.
Gender hardly matters to me in a video game anyway. Hell my main Shepard from singleplayer is a Femshep because I preferred Hale's performance to Meer's in the first game.

Same with me... on both accounts. There were no females at all in that DLC.
Edit: I guess this is also why I hardly ever use my Slayer, even though Vanguards are my favorite class.

I spec them both differently, but use my female builds more often because they are easier to use since they take up less of the screen. Makes it easier to spot the enemy IMO.

It's all about the voices/grunts. Biotic casters are really annoying - the males marginally more so. I don't mind playing either soldier. I usually avoid playing as humans anyway because ME is all about the aliens. The new N7 characters sound better than the original humans.

Generally, I prefer playing the alien races... only (non-DLC) human character I play regularly is fHE. But I tend to prefer male characters for soldier and sentinel, female for adept and engineer, and both for infiltrator and vanguard. So, mostly balanced.
