I would say you pick the type of demon, and what demon you pick would give you different abilities.
I suppose reguardless of what demon you pick, it would have to be classed as somewhat uniquely intelligicent or cunning, as most demons seem to have this urge to rampage.

As of types, probably Pride demons are best - they tend to be the cunning one that keep host human/dwarf whatever-looking to trick others.

The player shouldn't start as a demon in this scenario, however; just a spirit or maybe an ambiguous fade presence would be preferable at first, with becoming a demon proper being the result of certain intentions (what would be the "dark side" path in other BW games).
I suppose that if we are to retain the current lack of player agency and significant dialogue options, I would personally actually prefer it if the DA team acknowledges as much and casts the player as more of a guide like this than pretend the protagonist is still our character. I'd find it much easier to be content with a backseat position like that than with another character like Hawke, whom you think you have some control over but eventually ends up doing the same frustrating stuff no matter how you play him.
It's not what I initially would've argued for, but after thinking about it for a bit, and looking at the direction the series is going, this might actually have some potential. The spirit could be silent as well, I guess, giving those wanting a silent protagonist what they want, while also giving the other side the ability to speak through the protagonist. Some (limited) body hopping could work as well, as would the ability to force your host into becoming an abomination in the "dark side" endgame. Forcing your will upon others paragon/renegade-style would actually make some in-universe sense like this as well, and it would be a good excuse to have the option to make the protagonist glow all blue or red like Anders did back in DAII.

He doesn't know why or how he got there, could be a number of reasons and none at all ( he went through the portal with Morigan / part of him remained in the Fade the first time he was there / or the old cliché: he died and some cosmic and/or demonic power found a use for him, etc).
Throw in what started in Kirkwall + one pinch of impending doom, mix it with real choices and consequences (I know, really hard that one) + the morality of possessing someone. Make it in such a way that your host isn't really happy of sharing his body so you have to battle for control with him and expand every thing with making every battle uncertain, as loosing control over the body in the middle of a battle or a tough choice.
Place it in Orlais/Tevinter add assassins and the inquisition/templars + Qunari for flavor and Voilà, you have a nice concept for a game set in the Dragon Age.
Would hit that a mile away.
EDIT: add Flemeth as a ''mentor'' whispering in your skull (much like Kreia did in KOTOR) and BAM! GOTY, CE preorder.
LEDIT: better yet, make your host the most horrific murderer that could exist, so when you do loose control there could be some nasty consequences and in battle he can go on a small rampage.

For the most part you are correct. Rage demons, for example, no personality whatsoever.
The desire demon in the circle and Mouse, on the other hand, show human level intelligence and complexity.

What about the Rage demon from the quest Something Wicked? That one seem pretty intelligence.
I think if learned anything about the inhabitants of the fade is that they are alot more complexed then we expect, or at lest capable of being complex.
Also, don't all role playing protagonists start out as simple untill we give then personality.
With a demon protagonist, getting a personality would just be more of a plot point.

Huh, that was actually one of the few things I liked about that game. It gave me the feeling of creating my own character while actually having a set protagonist. A sort of morality bar, tracking whether one is behaving as a spirit or an outright demon would actually make sense in this case.
