You say this, and still you make a big deal about FemShep's default hair color. Sure, Bioware may have changed the poll because some parts of the community asked them too, and maybe some of these people used very unpleasant remarks, but the fact is that Bioware listened to their community and gave us more control over something. Obviously, its just FemShep's default look, so we can change it if we want: thats the beauty of a video game like this!
Think about the community for a moment; there are vast numbers of people who play these games, and only a small minority likely visit these forums (and voted in the poll). Of these people, not everybody will leave a message on the forums; I've been reading these forums for the past year or so, and only recently have I posted anything. Like me, there will be plenty of people who post, but not often. So I ask you, who do Bioware rely on for their feedback?
The majority of Bioware's feedback will come from the so-called 'vocal minority', who make their opinions known, in some cases repeatedly or with strong language. There will always be many people who don't get their opinions heard, and the fact that Bioware at least tries to cater to some of their community only makes them seem more involved and active, which is a good thing.
As for the topic of Tali's age, I never played ME1, as I am on PS3, so I don't know what she sounded like then. But the fact that she has spent the intervening time working on critical missions for the Flotilla indicates that she has matured a lot since the first game. Sure, she may be several years younger than Shepard, but as other people have mentioned, the Pilgrimage is a passage into adulthood, so it is clear to me that by ME2 she is definately an adult. I believe that Bioware made Tali a LI in ME2 because she was so popular, but they did the same with Garrus, who I understand was also very popular in ME1.
As for changing the ending, I have to admit that the endings feel more complete to me now that the EC has been released, although I would love Bioware to bring out something else to give us the sense that our other choices during the series mattered in the battle for Earth.
And for the record, I didn't vote in the first poll, but I voted for the redhead FemShep in the second poll. Why? Because I've always thought readheads are less common (in our time at least) than blondes and brunettes, and Shepard is definately someone special.
Of course, for one of my FemSheps, I've given her purple hair, but that was
my choice.

One more thing to put at the end of my essay; I am a big fan of Dragon Age as well. I thought that Origins had a much better story, but DA2 improved on the combat mechanics and spells/talents. I felt that DA2 suffered where ME3 suffered; only a few major decisions mattered long term, and then you were effectively left with one choice that affected what ending the game got. Don't get me wrong, I really enjoyed both games, but I reckon ME2 and DA:O did their final missions better.
