Greetings
I noticed in my last run, that Shepard says something about growing up on ships, and I was like. Um.... huh? So, I made a new import,. and sure enough, it said prior to import, Earth Born, but right before accepting the ME3 character, it switched to Spacer.
I loaded my other Shep's and sure enough, they all switched to Spacer.
I did search the forums before asking this question. I found zero results.

It sounds like a glitch but as you said, no-one seems to have experienced it before.
Have you tried using the gibbed save editor (search the forums if you don't know what this is) to see what it says if you import your save into that and also what happens if you create a save using that with a different background and import it into ME3? If not, I would suggest you do that.
If ME3 does always change your save to spacer, you could use the editor I mentioned above to change it back after you have imported the save.
