Why are not all DA characters bisexual so everyone can try all the romances without feeling estranged from their character?
Because characters are not there solely to be romanced.

Its like they can't win, they've said for awhile that romances weren't going to be like DA2, and now people are upset because shockingly romances aren't like DA2

The reason for this, and things similar, is because there isn't a consensus on how it should be. A large group didn't like the bisexual model in DA2, but a large group did. People generally only speak up when they're upset, but there are two different upset groups in this scenario.
