Bioware must have let them do gameplay capture and take the file with them...

I think some people , I guess youtuber with large/medium followers, had to get in touch with Bioware before Gamescom and get a scheduled to play the demo.
They were allowed to get 10 minutes out of their recordings.
It's possible Bioware or EA had to check every recording , and greenlight what's ok to show and what's not.

How crazy. Just did a search for BioWare base PAX Prime ( because I'm curious) and low and behold... there we are right at the top.
