Does BioWare have a say in what goes into guides? Itd be kinda funny if they purposely wouldn't let them post some stuff, like the hidden caves and other things.

Doubtful. I know Prima and BradyGames (the guide authoring companies) have a history of working very closely with game developers to write these. My experience with guides has generally been positive so I'm not worried.
You can preorder the CE guide here for 28 bucks. It also comes with some bonus in-game items which is nifty.

Seconding this, by the way. The authors will likely work closely with BioWare, indeed.
On the subject of completionism, I'm very much not a completionist, except in cases of increased story, characterization, lore. That stuff. Being that this is BioWare, however, I get the feeling I'll be drawn into the world to the point of making an exception.
