They are very close to release so Laidlaw needs to make sure they are focusing on bugs that can be fixed quickly. If a major bug pops up that can't be fixed in the short time left then content might need to be cut. Thats a decision the boss has to make which means Laidlaw is a very busy man. Pity him. lol

To clarify, she meant the blooper folder was created.
But still a good question! If a"bad" build is created, like a bunch of brokenness got submitted for whatever reason, this is why QA does Build Verification Testing (BVT). We go through the latest build and verify that it's stable and suitable both for testing and development use. If it isn't, QA doesn't "pass" it, so the latest Verified build is (almost) always good to use.
(edit) Further, we do also indeed have version control as well, which is used when applicable as you describe and in other fascinating and complex and sometimes frustrating ways.

I keep prodding the Devs in the hopes they'll release a Blooper Reel to the public.
But another thing I'd love to see is a funny "outtakes" video, with companions messing up their lines, storming off set and so on...
