Don't they use some kind of version control so they could just revert back to version before the bug filled update?

But still a good question! If a"bad" build is created, like a bunch of brokenness got submitted for whatever reason, this is why QA does Build Verification Testing (BVT). We go through the latest build and verify that it's stable and suitable both for testing and development use. If it isn't, QA doesn't "pass" it, so the latest Verified build is (almost) always good to use.
(edit) Further, we do also indeed have version control as well, which is used when applicable as you describe and in other fascinating and complex and sometimes frustrating ways.
