From the loading screen it looks like all generic templars (and possibly mages) are indeed male.
Oh well.

I doubt this will be the main loading screen as the focus of the game isn't the Templar Mage war. Maybe it will be, I'd be surprised though.

Facial customisation is ridiculously deep. You can customise colours using a full wheel and then adjust the size/shape of facial features using a dragging tool.
