It means the master disc has been delivered to the manufacturer. The discs they used were often gold in colour. Hence going gold.

Errr... how can they made enough disc for the launch in less than 3 weeks if the master version is not yet made??? I mean even Amazon promised delivery on the same day of the launch...

Time to manufacture a few hundred thousand copies, ship them across NA, EU and other locations, plus time for day 1 patches to get finalized.

Printing thousands of copies, distributing to retailers (both online and in stores) around the world, probably last minute tweaks that will be in a tiny day one patch... Stuff like that. Making physical games a reality takes a while.
