Someone should tweet to ask why snakes (of any size) have never appeared in Dragon Age. You'd think, snakes being a super common fear, that they'd use a few of them as enemies, at the very least.
They should totally put an Astrarium in the Deep Roads just to troll players. Player looks at the astrarium dubiously, then peeks into it and sees beautiful rock molecules.

I suspect that part of the reason might be rigging/animation. Things with legs are hard enough, and riggers and animators usually have a lot more practice with those!
(Hmm... a hybrid IK/FK spine would probably make it easier, but still... such complicated movement sounds time consuming to try and work out. Though I admit, I'm more of a hard-surface/environment modeller than a character/creature person, so, grain of salt.)
^ I don't think the rigging of the model might be that big of an issue on flat terrain. World of Warcraft has had snakes since release in 2004 and they move more or less normally. BUT, there is an issue when it comes to a ground-bound creature like a snake that has no legs. In WoW when a snake has to move over uneven terrain you get this weird perpendicular movement that is really immersion breaking because the snake's body doesn't have "bones" that can conform to the shape of the terrain like a real snake can/does. In other words, it's not a truly three-dimensional creature.
But yeah, different type of creepy-crawlies would be nice for variety. Perhaps even other types of insects. Or hell, just even different looking spiders; even Skyrim has a few re-colors for those. But why does it always have to be spiders specifically? One of the main advantages is that you can have spiders come from the ceiling, but they don't seem to take too much advantage of that, most of the spiders just hang out on the ground waiting for the player to run into them.
Bioware loves the sexy slither of a lady snake. Oh baby ...
(Also, we already got dragons, wyverns and gurguts. More giant reptiles at this point is kinda overkill.)

Certainly true. Lots of games have snakes, or snake-looking things (or rigs that would have to work similarly, like sharks). My bad, I should have been more clear with my point. It's less about whether it could be done, more about whether it was worth doing. It would take time, given that it's a somewhat unusual type of rig (I'm sure BioWare riggers are awesome and talented people). Also, it's a rig that can't be shared with other enemy types the way a biped or quadruped rig can, so it might not be considered the best use of resources.
Which might explain why we have so many spiders - they went to the trouble to make those animations, might as well keep using them since they have them from past games.

ah the lack of new DLC on last gen? I'm sorry about that. But our options were this or stopping DLC sooner.
I realize that that isn't very helpful but the upcoming DLC will not function on last gen.
