As much as I adore Peter Dinklage and have liked him in everything I've seen him in, fantasy dwarves (which Varric is) are not achondroplastic dwarves (which Dinklage is). Fantasy dwarves, while stocky, have average body proportions.
I don't believe there is an actual type of dwarfism that would account for fantasy dwarves. Perhaps growth hormone deficiency (like many of those in the 1939 Wizard of Oz, and the 1932 horror film Freaks), but there are other attributes that distinguish that type as well. The delayed onset of puberty resulting from this condition leads many of them to have a doll-like appearance, which is certainly not representative of the typical fantasy dwarf.
In this case, casting Dinklage would be about the personality that he brings to the role, which is considerable. However, such a choice all but guarantees that a DA live action effort would have hardly any dwarves at all for the reasons I mentioned above.

When I first started at BioWare, the April Fools joke was a swear jar in the kitchen. If legit, everyone would've been bankrupt end of day.
