I think any Templar would be interesting as a window into the Order's new mission and duty after splitting from the Chantry.

- He's been in Origins and seen the worst-case scenario of mages unprotected by their own folley and demons.
- He's been in DA2 and seen the Templar at their worst, fully corrupt with little responsibility to their masters. He's also seen how this can result in a case similar to Origins.
- He's now involved in a war where the conflict between two factions is reaching it's head and his divided loyalties will be confronted.

I can just imagine the player trading with some mage and suddenly the inventory screen turns off and you just see the mage's corpse on the floor and the templar standing over him.
Or you're speaking with some random mage as part of a side quest to restore some order to a town and suddenly the templar just draws his weapon and starts attacking the mage while he's talking to you.

Alistair wasn't even a Templar and wasn't really anti-mage. He had templar training but was never a "full" templar. Cassandra is a Seeker and I believe they're still part of what is left of The Chantry. Meanwhile The Templars have split from The Chantry and what mages to be dealt with.
If we're not getting a templar companion, then I want no mage companions for DA3. They suck.
