Armor Choice for Tank Sentinel?

 I am currently playing a tank sentinel that uses his powers to supplement his tanking with an assault rifle. I go for max defense and use chain/ neural shock overload to stun enemies before I gun them down when the opportunity strikes.

So my build is primarily a tank, but also makes good use of it's powers. The question now is, which armor should I get? I just beat palavin and can buy my first full armor set. I am just trying to decide between full armor sets, and not talking about customizing the N7 armor. Things like Inferno Armor, collector armor, cerberus armor, terminus armor, and blood dragon armor. If I missed one in that list that would be good let me know. At this point in time a full suit will serve me best, and maybe later on I'll try custom pieces. And don't just tell me to use what looks best!

collector armor for the extra shields

Terminus gives you +30% Shields. Alternatively, Inferno Armor will offset some of the Tech Armor penalty and gives your powers a boost in damage.

Either Collector Armor or an armor combo with the Capacitor Helmet and Kassa Chestpiece. Personally, I think shield recharge speed (shield gate) is more important than total shields.

What's your bonus power? You can use Barrier, Fortification, or Defense Matrix to up your damage reduction. Combined with Tech Armor your pretty much become invincible.

Is there any way to be a tank Sentinel, with good fire power but not having really slow cooldowns?

I don't intend to carry more than 2 guns. Preferably just one assault rifle.

Then check this thread by swk3000. And if you have the Firefight Weapons Pack DLC, take the Punisher SMG since it is a better assault rifle than other assault rifles.

Currently I have a Sentinel with both Barrier and Tech Armor at rank 5, and my cooldowns are ME2 levels:
- Warp is about 4 - 4.5 seconds (no cooldown evolutions)
- Throw is about 2 seconds
- Overload (rank 1 or 2) is about 5 seconds.

If you take the rank 6 Recharge Speed evolutions on Barrier and Tech Armor, your cooldowns will be quicker and you will still have good damage reduction.

And that is with a +200% cooldown. With +% cooldown bonuses and evolutions, you can get lower cooldowns. Pistols and SMGs with Ultralight Materials will keep your cooldowns low.
